Twice-Baked Sweet Potatoes with Orange Zest and Fresh Ginger
Can you smell the warm zing of freshly-grated ginger and the uplifting zip of orange zest in this yummy and healthy version of twice-baked potatoes? Sweet potatoes provide a number of health benefits and are easy to add to your diet – they’re also delicious! Packed with 769% of our daily recommended value of Vitamin A and 69% of Vitamin C, sweet potatoes are rich in antioxidants as well as being an excellent source of fiber for gut health. Sweet potatoes store well for weeks in a cool, dry place which makes them an ideal choice for stocking up during the quarantine. Try them with melted butter, cinnamon, honey or maple syrup when you’re craving something sweet and trying to avoid the COVID-15 (formerly known as the freshman-15!). Ginger and garlic also have health benefits and do well in storage. All of these items and more are available in our farm market.
Ingredients
– 4 Sweet Potatoes
– 4 tsp freshly-grated ginger
– 2 tsp minced garlic
– grated zest and juice of 1 large orange
– salt and pepper to taste
Directions
Heat oven to 350 degrees (F). Poke sweet potatoes with a fork in 2 to 3 places. Bake until tender (about 1 hour). Allow potatoes to cool for approximately 10 minutes or until cool enough to handle, then slice the top quarter of each potato. Carefully scoop out most of the flesh from the large sections, leaving a bit of potato flesh behind to make a sturdy “boat”. Scoop flesh from the top sections, too. Puree or mash the flesh with the remaining ingredients. Fill the boats with pureed potato. At this point, the potatoes may be refrigerated for later use. To serve, bake at 400 degrees (F) until heated through. Makes 4 servings.
